While relatively new to North America, the Bresse chicken has been a highly esteemed and sought after meat bird in France for centuries. The marbling of Bresse meat makes its flavor a total standout among chefs and home cooks.
We have been so excited to introduce this breed to our community as a sustainable substitute for the traditional Cornish Cross meat bird available on the market. Unlike the Cornish Cross, Bresse chickens can be raised to maturity with no health problems and go on to be hardy, prolific reproducers of superior meat and eggs. This provides backyard homesteaders the opportunity to have a fully closed loop system of chicken production. No more relying on large hatcheries and failing genetics to fill your freezer.
We are currently offering white Bresse only, which are beautiful and patriotic with their steel blue legs and bright red combs. They are incredibly hardy and excellent free rangers. Hens are prolific layers of large cream eggs. Birds selected for meat can be harvested at 16-18 weeks of age, and can be fed a combination free range diet to cut the feed bill.
It is an honor to present an ethical meat option to the world, and even if in a small way, to impact a small part of the local food system.
